Grape varieties and terroir

Character assembly:

- Cabernet Sauvignon (62-65%): structure, intensity, aging potential
- Merlot (35-38%): roundness, flesh and opulence

The vineyard lies on deep gravelly hillocks on clay-limestone subsoils, offering optimal drainage and slow ripening, conducive to the production of dense and harmonious wines.

Tasting

Color: Deep red with purple highlights, dense and shiny.

Nose: Intense and complex, blending ripe black fruits (blackcurrant, blueberry), sweet spices, liquorice, notes of cedar and blond tobacco, with a subtle smoky minerality.

Palate: Full and velvety attack, dense and structured material, tannins of great finesse. The balance is remarkable between power and freshness. The finish is long, racy, with notes of graphite and persistent spices.

Storage Potential

A wine with very long aging potential: it can evolve majestically over 30 to 40 years, developing tertiary aromas of great complexity (leather, truffle, undergrowth).

Food and Wine Pairings

Sublime with:

- Grilled aged beef rib
- Leg of lamb confit with herbs
- Royal hare
- Cep gratin
- Hard ripened cheeses (Comté 36 months, Salers)
