Tasting note | The 2005 vintage of the mythical Champagne Salon opens with a pale gold color with silver reflections, highlighted by a remarkable fine effervescence. The nose presents itself with restraint, a crystalline purity, before blossoming into notes of white flowers, candied lemon zest, fresh hazelnut, and flint. A mineral tension asserts itself upon aeration, carried by the typical chalk of Mesnil-sur-Oger. On the palate, the attack is both lively and silky, with surgical precision. The wine unfolds gracefully and intensely with aromas of white fruits, almond paste, white pepper, and fine pastry. The structure, straight and elongated, carries a chiseled finish, almost saline, that stretches out long on an impression of obviousness and purity.
