Grape varieties and terroir

Iconic assembly:

- Cabernet Franc (35%): complexity, finesse, freshness
- Cabernet Sauvignon (35%): structure, depth
- Merlot (30%): roundness, richness

The Günzian gravel that makes up the Figeac terroir gives the wine a signature close to that of the great Médoc wines, with remarkable freshness and exceptional aging capacity.

Tasting

Color: Deep red, intense garnet, with light tiled reflections announcing a beautiful evolution.

Nose: Elegant and complex, it expresses aromas of jammy black fruits, violet, graphite, blond tobacco and sweet spices.

Palate: Supple attack, silky texture, ample and structured mouthfeel. The tannins are perfectly integrated, offering a velvety sensation in the mouth. The finish is long, fresh and persistent, with notes of ripe fruit and cedar.

Storage Potential

In Salmanazar (9L), the aging capacity is increased tenfold: 50 to 70 years of aging, to evolve towards tertiary aromas of rare complexity.

Food and Wine Pairings

An exceptional wine for:

- Tournedos Rossini
- Royal hare
- Leg of Pauillac milk-fed lamb
- Roasted pigeon and reduced juice
- Hard aged cheeses (Comté, Parmesan 36 months)
