Grape varieties and terroir

The 2007 Château d'Yquem is made from Sémillon (80%) and Sauvignon Blanc (20%) grape varieties. Sémillon, particularly well-adapted to noble rot (Botrytis cinerea), gives the wine its richness and roundness, while Sauvignon Blanc brings a touch of freshness and acidity. Yquem's exceptional terroir, composed of gravelly and clayey soils, favors the development of noble rot and allows the grapes to concentrate all their flavors and complexity.

Tasting

Dress :
Intense, luminous golden color, with amber reflections, revealing the richness of the wine.
Nose :
The nose is opulent and complex, offering aromas of exotic fruits (mango, pineapple), candied fruits (apricot, peach), accompanied by floral notes and honey. Hints of vanilla and caramel blend with slightly spicy notes, adding depth to this fragrant bouquet.
Mouth :
The attack is generous and creamy, marked by a beautiful sweetness, but perfectly balanced by a refreshing acidity. The palate is ample and opulent, with flavors of candied fruit, honey and nuts, underlined by a subtle woody note. The finish is long, elegant and persistent, leaving a sensation of freshness and richness.

Storage Potential

The 2007 Château d'Yquem is a wine with great ageing potential. Although it can be enjoyed now, it will continue to improve over several decades, evolving into more complex aromas of dried fruit, hazelnut, and caramel. This wine could age for 30 years or more, depending on storage conditions.

Food and Wine Pairings

This prestigious wine pairs wonderfully with refined dishes such as foie gras, caviar, blue cheeses, or candied fruit desserts, such as tarte tatin or citrus pastries. It can also be enjoyed on its own to fully appreciate its complexity and richness.
